| Soft Flour | 670 | grams |
| Cocoa Powder | 120 | grams |
| Waverley AV Shortening | 680 | grams |
| Water | 180 | grams |
Cream the sugar and glucose together on fast speed for 15 minutes.
Add to the other ingredients except Waverley AV Shortening and water to the above, mix in for 1 minute on slow speed.
Bring to Waverley AV Shortening and water to the boil, add to the above and mix on slow speed until clear.
Scale the above recipe onto a prepared 30 x 18 baking tray.
Bake at 190°C/370°F for 25 minutes.
When cool, cover the top with a melted chocolate fudge icing, cut into desired shapes.
